1. Throw in green olives or capers, if everyone in the family would go for it!
2. You can skin the chicken if you want to (most people don’t), and I would recommend dark meat.
3. You could serve with a pasta (linguine could be cute, since it does sound a little like Liguori 🤷), or you could serve the chicken with really delicious bread. The sauce is perfect for dipping!
3 lb of chicken, cut up
1/4 cup butter
1/2 cup flour
2 cups thinly sliced onions
5 diced tomatoes
1/2 cup chopped green pepper
2 cloves minced garlic
1 can tomato sauce (8 ounces)
3 ounces sliced mushrooms
Salt and pepper, to taste
1 teaspoon oregano
1 teaspoon crushed red pepper
1. Wash chicken and pat dry. Coat with flour.
2. A large skillet, melt butter over medium heat.
3. Cook chicken in hot butter over medium heat for 15 to 20 minutes, until golden brown. Remove chicken, set aside.
4. Add onions, pepper, and tomato to the skillet. Cook and stir over medium heat until veggies are tender.
5. Stir in remaining ingredients. Add chicken; cover and simmer 30 to 40 minutes or until the thickest pieces of meat are tender.
